Shred and grate cheeses. Set aside.

In a small bowl combine mayonnaise, garlic powder, onion powder, turmeric, salt and pepper. Set aside.

Chop spinach and sauté in a teaspoon of olive oil. Add sauteed spinach, 3/4 cup of mozzarella cheese, 1/4 cup of grated parmesan, diced grapes tomatoes, and mayonnaise mixture in a large bowl and gently stir.

Add in finely diced marinated artichoke hearts, gently stirring until combined.

Diced cooked chicken. Make sure chicken is really warm before you move on to the next step. Microwave for a minute if you need to reheat it.

Once toasted add the remaining mozzarella cheese to the UNTOASTED side of the bread. Put the bread back into the broiler for a minute or two just until cheese is melted.

Assemble sandwich. Add a very generous amount of the chicken mixture on the side of the bread without the cheese.
